Not sure then without seeing them, do you run spacers (washers) between the caliper and adaptor? That's pretty much the only thing that would stop you getting full pad / rotor overlap

Are you using 2 or 4 pot calipers? You should really use 4 pots with larger rotors and then I only use Hope adapters with Hope calipers just to avoid any headaches.
