Is it possible to add travel to a Rocky Mountain Pipeline in both the front and rear?
I'd like to give it a little more travel for more downhill orientated stuff and jumps. Ex: Rainmaker @ trestle bike park

Any more travel that you add to your bike is going to raise your bottom bracket hight. Offset shock bushings can help a bit, but only so far.

A different feel on the bike. More on it, less in it.

You can easily add ~10 to 20mm of travel to the front of just about any bike without issue. It'll ride a bit differently, as Big Bird mentioned, due to a higher bottom bracket height and slacker head angle.

Rear travel is pretty much fixed on every bike. If you're having bottom out issues, I suggest checking your sag. Most bikes run 25-35%. If it's an air shock, you can have your shop add a volume spacer inside the air spring to help it ramp up more and prevent harsh bottom outs.

These videos are well worth a watch:

No. While they do add a bit of cushion, plus tires are squirmy when pushed hard (like you'd need to do to make all the jumps on Rainmaker).

If it were me, I'd opt for the 160/150mm bike with regular 27.5 wheels and tires.
