A good way of looking at it but I don't think using a dropper would additionally tire me out so much. But I definitely only use it where it makes sense. Also you can easily lower the saddle just a bit, so you don't have to do deep squats... Saddle height is saddle height and you want to have the saddle as deep in the frame as possible to have maximum leg clearance in the downhills therefore the 175mm lenght, in veeery steep trails maybe I would consider to lower it additionally but then in racing, this can be annoying...

You are right we are really tall, 180cm and super long legs. So a 175mm seatpost makes sense for us, a shorter one would bother me in the downhills. Happy you bought the new Sight, I hope you like it as much as we do?!
