Actually its because the weekday traffic would just be too sparse to make it viable. At keystone, for example, the lifts are already on for the tourons so there's no reason no to open the bike park since the lift operation represents a big chunk of the daily overhead.

Not to mention they are busy building awesome stuff for you to ride during the week.
