Woody I think you are headed the right way. 34T on 27.5 would make sense. I'm running a 32T on a 29er and it's fine. Also if you're really worried buy a cheap ring to try or ask your riding buddies to try a ring for a week. Most riders have enough parts

Not super picky about how it is looking as long as it's riding well. I go ghetto and put electrical tape around shift to brake cables + the dropper.
shimano 540 the cheap pedal or one of its variations with shimano M56 cleat. this set up is nice. you can set the tension and it'll release when you need it to. very tunable.

we've been digging like crazy and its looking buff and ready.
